The slogan “Eat the Rainbow” promotes the consumption of a variety of colorful fruits and vegetables necessary for optimized health. Red fruits and vegetables contain a carotenoid (a type of pigment) called lycopene. Lycopene is a potent scavenger of free radicals and helps to protect against cancer as well as heart disease, lung disease, and stroke. Red fruits and vegetables are also packed full of other essential nutrients like vitamin C. Just one red bell pepper provides your daily need for Vitamin C. Be sure to include red fruits and vegetables into your meals for optimized health, performance, and wellness. Stay tuned throughout the month of March to learn more about how the other color varieties of fruits and vegetables benefit our health. Don’t discriminate, eat a rainbow and incorporate as many colors into your diet as you can.
